Ingredients: 2 large bell peppers (halved and seeded) 4 eggs 1/2 cup cooked breakfast sausage or crumbled turkey bacon 1/4 cup shredded cheddar cheese 2 tbsp chopped green onions Salt and pepper Instructions: Preheat oven to 375°F. Place halved bell peppers in a baking dish. In each pepper half, layer cooked sausage, crack an egg, and top with cheese. Bake for 20–25 minutes or until eggs are set. Sprinkle with green onions and serve hot.
