Ingredients:
For the Oxtail:
2 lbs oxtail, trimmed
2 tbsp brown sugar
1 tbsp soy sauce
1 tbsp Worcestershire sauce
1 tbsp all-purpose seasoning or jerk seasoning
2 cloves garlic, minced
1 tsp thyme
1 small onion, chopped
2 cups beef broth
1 tbsp oil
For the Spicy Slaw:
1 cup shredded cabbage (green or mixed)
½ cup shredded carrots
1 tbsp mayo
1 tbsp apple cider vinegar
1 tsp honey
½ tsp crushed red pepper
Other:
6 sweet Hawaiian slider buns
Optional: jerk aioli or extra sauce for topping
Instructions:
Sear the Oxtail:
Season oxtail with all-purpose or jerk seasoning, brown sugar, garlic, soy, and Worcestershire. Sear in oil until browned.
Braise Until Tender:
Add onions and broth. Cover and simmer for 3–4 hours (or use pressure cooker for 45 minutes) until meat falls off the bone.
Make the Slaw:
Combine cabbage, carrots, vinegar, mayo, honey, and red pepper. Mix and refrigerate.
Assemble the Sliders:
Shred oxtail meat and place on bottom bun. Top with slaw and optional aioli, then finish with the top bun.
