PART 1: Bobotie (Spiced Meat Casserole with Egg Custard)
Ingredients:
For the Meat Filling:
2 tablespoons vegetable oil or butter
1 large onion, finely chopped
2 garlic cloves, minced
2 lbs (900g) ground beef or lamb
1 slice white bread, crusts removed, soaked in ¼ cup milk and mashed
2 tablespoons curry powder (mild or medium, to taste)
1 teaspoon turmeric
1 teaspoon ground coriander
½ teaspoon ground cumin
1 tablespoon brown sugar
½ teaspoon salt, plus more to taste
1 teaspoon black pepper
1 tablespoon fruit chutney (like Mrs. Ball’s) or apricot jam
1 tablespoon white vinegar or lemon juice
2 teaspoons Worcestershire sauce
½ cup raisins or sultanas
¼ cup slivered almonds (optional)
2 eggs, lightly beaten (1 for meat, 1 for custard)
2–3 bay leaves
For the Egg Custard Topping:
1 cup milk
1 egg, lightly beaten
Pinch of salt and turmeric
Instructions:
Step 1: Prepare the Meat Mixture
Preheat oven to 350°F (180°C).
In a large skillet, heat oil or butter over medium heat. Sauté onions until soft, about 5 minutes.
Add garlic and spices (curry powder, turmeric, coriander, cumin) and cook for 1 more minute until fragrant.
Add ground beef and cook until browned, breaking it apart.
Stir in mashed milk-soaked bread, chutney, sugar, vinegar, Worcestershire, raisins, salt, pepper, and slivered almonds if using.
Let simmer for 5 minutes. Remove from heat and let cool slightly.
Stir in 1 beaten egg to help bind the mixture.
Step 2: Bake the Bobotie
Transfer meat mixture to a greased 9x13-inch (or similar) baking dish.
Press down and smooth the top. Place bay leaves decoratively on top.
In a bowl, whisk together 1 cup milk, 1 egg, pinch of salt, and a pinch of turmeric.
Pour the custard gently over the meat layer.
Bake for 35–40 minutes, until the custard is set and golden brown.
PART 2: Traditional South African Yellow Rice
Ingredients:
1 cup basmati or long-grain white rice
2 cups water
1 cinnamon stick
½ teaspoon turmeric
¼ teaspoon salt
2 tablespoons raisins
1 tablespoon butter
Optional: 1 teaspoon sugar (for a slightly sweet note)
Instructions:
Rinse rice under cold water until water runs clear.
In a saucepan, bring water, cinnamon stick, turmeric, salt, and raisins to a boil.
Add rice, reduce heat to low, cover, and simmer for 15–18 minutes until rice is tender and water absorbed.
Remove from heat, fluff with a fork, and stir in 1 tablespoon butter (and sugar, if using).
