Ingredients: 2 sweet potatoes (cubed) 1 small onion (diced) 1 bell pepper (diced) 2 cloves garlic (minced) 1 tsp smoked paprika Olive oil Salt and pepper Instructions: Sauté onions and peppers until soft. Add sweet potatoes and seasonings; cook until tender and caramelized. Optionally top with a fried or poached egg.
