Mediterranean Chickpea Wrap

Ingredients: 1 whole wheat or spinach wrap 1/2 cup canned chickpeas (rinsed and mashed slightly) 1/4 cup cucumber (diced) 1/4 cup cherry tomatoes (halved) 2 tbsp red onion (finely diced) 2 tbsp crumbled feta cheese 1 tbsp hummus A handful of mixed greens or spinach 1 tsp lemon juice Salt and black pepper to taste Instructions: In a bowl, mix mashed chickpeas, cucumber, tomatoes, onion, feta, lemon juice, salt, and pepper. Spread hummus on the center of the wrap. Add greens and top with chickpea mixture. Roll up tightly and slice in half.
