Ingredients:
2 large whole wheat or spinach tortillas
6–8 slices deli turkey breast (smoked or oven-roasted)
1 cup fresh baby spinach leaves (washed and dried)
½ cup shredded carrots
¼ cup sliced cucumbers (thinly sliced lengthwise or in rounds)
¼ cup crumbled feta or shredded mozzarella cheese (optional)
2 tbsp hummus or cream cheese (flavored or plain)
2 tbsp Dijon mustard or your favorite sandwich spread
Salt and pepper to taste
Optional: sliced avocado or red onions for added flavor
Instructions:
Warm the Tortillas:
Warm tortillas slightly in a dry skillet or microwave for about 10 seconds. This makes them more pliable and easier to roll.
Spread the Base:
Lay each tortilla flat. Spread 1 tablespoon of hummus (or cream cheese) and 1 tablespoon of mustard evenly on each.
Layer the Ingredients:
Place 3–4 turkey slices across the center of each tortilla.
Top with spinach leaves, shredded carrots, and cucumbers.
Sprinkle on cheese if using.
Add sliced avocado or red onion if desired.
Season:
Lightly sprinkle with salt and pepper to enhance flavor.
Wrap It Up:
Fold in the sides, then roll the tortilla tightly from the bottom up like a burrito.
Serve:
Slice in half diagonally and serve immediately.
Optional: secure with toothpicks and wrap in parchment for on-the-go lunches.
