Ingredients: 1 cup dry lentils 1 small onion (diced) 2 carrots (sliced) 2 cups spinach 4 cups vegetable broth 2 cloves garlic (minced) 1 tsp thyme Salt and pepper Instructions: Sauté onion, carrots, and garlic. Add broth, lentils, thyme; simmer 30 mins until lentils are tender. Stir in spinach and cook 5 more mins.
