Ingredients: 1 cup cooked quinoa 1 cup chopped kale 1/2 avocado (sliced) 1/4 cup shredded carrots 1/4 cup chickpeas (roasted or plain) 1 tbsp olive oil 1 tbsp lemon juice Salt and pepper to taste Instructions: Massage kale with olive oil and lemon juice until tender. In a bowl, layer quinoa, kale, carrots, chickpeas, and avocado. Drizzle with extra lemon juice and season.
